How do I thicken a tomato based sauce?

I threw together a tomato based sauce to put over ravioli tonight. But it is still pretty watery.

Anyone have any ideas on how to thicken it up?

I know that w/ gravy you can do the cornstarch thing, but would that make this creamy?

  • Just reduce it over a low heat and make sure you stir occasionally so it doesn't stick to the bottom. Cornstarch does work, and it won't make it creamy, but it will make it more like a glaze if you add too much.

  • I agree with dannydawna, just keep cooking it down, it will reduce and get thick.

  • I use tomato paste-- it'll thicken up very quickly, not to mention add a ton of lycopene!-- very good for you.

  • Use a bit of tomato paste or even a couple tablespoons of butter.
