  • I have this in the oven right now, I am taking it to my sick uncle:
    Easy Hamburger Casserole

    1 lb extra lean ground beef (or brown ground beef or turkey and drain fat)
    1 small chopped onion
    ½ tsp salt
    ½ tsp pepper
    1 pkg (16 oz) frozen mixed vegetables
    1 can cheese soup
    1 (16oz) pkg tater tots

    Heat oven to 375°. Mix beef, onion, salt, and pepper in ungreased 2 qt casserole. Arrange vegetables on meat. Pour soup over, cover with tater tots. Bake uncovered 1 hour or until potatoes are golden brown.

  • Most of my favorite are any crock-pot recipe. I love throwing it all together and just leaving it to do it's thing until it's ready, besides the occasional stir. I get most of my recipes from Mixingbowl.com or Rachael Ray.

  • Ramen Coleslaw

    1 pound bag shredded coleslaw
    1/2 cup roasted (I use unsalted) sunflower seeds
    2 packages ramen noodles (2 Oriental flavor or 1 Oriental/1 Chicken)

    Dressing:
    1/2 cup vegetable oil
    1/3 cup cider vinegar
    1/4 cup sugar
    2 ramen flavoring packets

    Crush dried ramen (about 1" pieces) and mix in large bowl with cole slaw and sunflower seeds.

    In a separate bowl, mix dressing ingredients. Add to salad and toss just before serving.
