Homemade chicken nuggets

I've been thinking of trying to make my own nuggets. Does anyone have a good recipe?

  • Chicken strips or nuggets (my kids prefer these over any fast food chicken)

    2 lbs. chicken breast, sliced into strips or chunks.

    Sauce: 4 eggs, 1/3 c. water, 1 cup Louisiana hot sauce (the strips are NOT spicy hot), 1 1/2 tsp salt, 1 1/4 tsp ground black pepper, 1/4 tsp garlic powder.

    Dredging mix: 2 c. all purpose flour, 1 Tbsp baking powder, 1/4 tsp salt.

    Dip chicken strips into sauce, then into flour mixture. Fry a few pieces at a time (depends on the size of your fryer) until they are done, takes about 4 or 5 minutes.

  • I like to use cut up chicken breast and coat them in egg whites and then in crumbled cheese crackers. Bake at 400C on a cookie sheet for about 20 min turning half way.

  • my aunt used to make these things called "chicken fingers' that were really good - she got the frozen chicken tenders, thawed them out, rolled them in flour, dipped them in egg, and rolled them in breadcrumbs. She deepfried them for just a minute to crisp them up and then stuck them in the oven to cook. She would do big batches and once they cooled, would wrap them in foil and stick them in the freezer. Not the healthiest thing, but still....
    I make them but I just season them, dump them in the roaster oven (no breading) and spray them with cooking spray... so they're like unbreaded chicken nuggets. the kids dip them in ranch.
