  • Spanish Rice
    1 1/4 lb ground beef
    1 c. instant rice
1 can (15 oz) tomato sauce
    2 tsp chili powder
1 1/2 tsp each dried minced onion, oregano
    1 tsp ground cumin
    1/2 tsp salt
1 can corn, drained (I use an 11 oz can of niblets)

Brown ground beef in a large skillet, drain fat. Add remaining ingredients AND 1 c. water. Bring to a boil and simmer 10 minutes or until rice is cooked and liquid is absorbed. Adjust seasonings to taste.
