  • You can saute it in a little oil or butter. Just pop them in the hot pan and stir occasionally until they turn pink. My favorite though is to get Old Bay Seasoning and use the recipe on there, but for your dish, serving with rice or noodles, the saute method would work. How about if you add a bit of garlic, salt and pepper, and serve over the noodles?

  • I did not get this in time for dinner, but it is a quickie which can be fixed ahead of time and served cold for moms on the go
    CANCUN SHRIMP
    2 Tablespoons olive oil
    2 cloves garlic, minced
2 lbs. shrimp, peeled and deveined
    cumin
    lemon juice
    pepper to taste
    ** MICROWAVE **
    1. Microwave olive oil with garlic on HIGH for 30 seconds in microwave-proof dish.
    2. Stir in shrimp with cumin, lemon juice and pepper. Arrange shrimp in single layer in a casserole dish.
    3. Cover casserole tightly and cook on HIGH for 2-3 minutes, stirring every minute until shrimp just begins to turn opaque. Remove from microwave and let stand additional 2-3 minutes to complete cooking. Serve hot or cold with bowl of cocktail sauce on side. Can also be prepared and served with shells. Makes 8 servings or serveral appetizers.
