  • Spaghetti. If you make spaghetti and meatballs, you can have meatballs for subs, too. Roast chicken. Pork chops.

  • Spaghetti (or any pasta) and meatballs is a great idea...or just meat sauce. Lasagna. Tacos or Burritos.

    Veggie stew with dumplings (crockpot)

    Tofu "fish sticks" with sweet potato or acorn squash baked "fries"

    Tamale Bean Pie

  • Meatloaf baby! Don't just assume beef, either. If you can find ground chicken breast, get two pounds and mix it with 1/4 cup olive oil, 1/3 cup soft bread crumbs (that's about 1 slice of bread) 1 cup of thawed frozen chopped spinach and seasonings to your taste (I like garlic, nutmeg and white pepper). Nice but not necessary would be some finely chopped red, yellow and orange peppers. Mix it all up, add some milk or chicken stock if it seems dry, pack it into a loaf pan or spank it into a nice compact loaf and bake it at 400 degrees for about an hour. Leftovers can be sliced thinly and made into grilled sandwiches--nummy! My kids never leave a crumb of this.
