What to do with all this zuccinni?

Need ideas besides grilling it and besides zuccinni bread

  • Zucchini stuffed with Italian sausage and rice, topped with marinara and parmesan, bake it.
    Pumpkin Zucchini bread
    Chocolate Zucchini bread
    Chocolate zucchini cake
    Zucchini brownies (oh so GOOD!)
    Peel & slice it, use it like apples in a pie
    Peel & slice it lengthwise, use intead of lasagna noodles for a low carb lasagna
    Peel & grate/grind it, freeze in 1 and 2 cup portions to use in baked goods during the rest of the year

    I have recipes!
    Saute it with tomatoes, season with garlic and Italian seasonings and cheese

  • Mmmm, zucchini fries...their best if you coat with batter and bread crumbs. They turn out so yummy and crunchy.
    We also put zucchini in our pasta sauce. The kids really love it.
    Mostly we just make zucchini cake/cupcakes. We have them at every birthday with homemade cream cheese frosting. Drool.

  • You can freeze it... or puree it and sneak it into your kids foods. I'm sure you've tried zucchini brownies and a variety of zucchini saute's?

  • I LOVE ZUCCHINI!!! It's really good if you slice it up with yellow squash and diced onion and fry it in a pan with some butter, and then add parmasan cheese to it. Yum. It's also really good if you bake them, scoop the filling out add some cheese, or meat, whatever you want and bake them again like stuffed potatoes. It's good sliced fried and put on pasta as well.

  • you can do zucchini boats..
    Just scoop the insides out to form a little well, Fill it with meat & cheese and bake it.

    Deep frieds good too, Just batter it and fry it

  • If you dont mind fatty...
    I love making zucchini chips.
    Slice them thin, dip in milk, and then into bread crumb/flour mixture, drop into hot oil, or deep fryer.
    eat shortly after taking them out so they are super cripsy.
