  • We do The Zone diet - the recipes are easy, and often have basic ingredients. No rice or potatoes! There is a link for recipes on the home page

    We eat a lot of eggs, cottage cheese, oatmeal, almonds, avocados, fruit and chicken.

    1/2 cup whole wheat flour (i use whole wheat pastry flour)
    1/2 cup all-purpose flour (i use whole wheat pastry flour)
    2 tablespoons brown sugar
    2 tablespoons baking powder
    3/4 teaspoon salt
    1 1/2 cups quick cooking oats
    2 cups milk (plant or animal)
    3 eggs, beaten (or egg substitute)
    1/4 cup olive oil (I think that olive oil is too heavy; I use softened butter)
    1/2 cup frozen blueberries
    Preheat a lightly oiled griddle over medium heat. In a large bowl, mix whole wheat flour, all-purpose flour, brown sugar, baking powder, and salt.
    In a small bowl, mix oats and milk. Whisk in eggs and olive oil. Pour into the flour mixture all at once. Continue mixing until smooth. Gently fold in blueberries.
    Pour batter about 1/4 cup at a time onto the prepared griddle. Cook 1 to 2 minutes, until bubbly.

    Hummus-Veggie Wraps
    Ingredients (use any cruchy fresh veggies)
    4 WW flour tortillas (8 to 9-inch rounds)
    1 C hummus
    1 small carrot/shredded
    2 slices red onion, separate into rings
    12 thin slices peeled cucumber
    16 young spinach leaves or 1 cup alfalfa sprouts
    Warm tortillas according to package directions. Lay on flat surface, spread lower half of each tortilla with 1/4 cup of hummus. Top hummus on each tortilla with a quarter of the carrots, onion rings, cucumber slices, and spinach or sprouts, leaving 1-1/2 inch margin on both sides.Fold right and left margins in, then roll tortilla from the bottom to enclose filling. Cut each wrap in half and serve immediately

    I serve this it over broccoli (and I make double the sauce).
    Pasta and Tofu with Finger-Licking Peanut Sauce
    1/2 cup low or no sodium vegetable broth
    1/4 cup chunky peanut butter (

  • 1/4 cup low-sodium soy sauce
    3 tablespoons brown sugar
    2 tablespoons rice vinegar
    2 teaspoons grated peeled fresh ginger
    2 teaspoons chile paste with garlic (add to taste, it is pretty spicey)
    4 garlic cloves, minced
    8 ounces uncooked whole wheat angel hair
    1 pound firm tofu, drained and cubed (optional)
    1 cup (2-inch) sliced green onions
    1 cup shredded carrot
    Combine first 8 ingredients in a small saucepan. Cook over medium heat 5 minutes or until smooth, stirring frequently (this can also be done in the microwave; use a tempered glass bowl, like pyrex, cook for 20 seconds, stir, repeat until smooth). Remove from heat. Cook pasta in boiling water 8 minutes, omitting salt and fat. Add tofu, onions, and carrot; drain. Place pasta mixture in a large bowl. Add peanut butter mixture; toss gently.
