Breakfast/Brunch Ideas

We are having a woman's weekend and I was looking for some simple ideas for a little breakfast! I was thinking mini muffins and a fruit tray and maybe sausage balls? Any suggestions are welcome!

  • Those sound like good ideas! Those sausag balls are pretty yummy I usually make or buy mini quiches. Nancy's makes wonderful little appetizer sized quiches. I think they have them at Costco and Sams and are a pretty good buy.

    When I make them I use regular sized muffin tins so they are about the size of a cupcake. Those are actually pretty easy to make. I make florentine quiche (swiss cheese, bacon, spinach, onion). If you'd like my recipe, message me and let me know.

  • ham n cheese puffs... I make them forcertain ocassions and everone raves over them... they're so easy... just get the pilsbury cresent rolls and in them put a piece of lunch meat ham and whatever cheese you like.... roll them up like puffs spray pan and tops with butter pam, sprinkly with onion and garlic powder and bake! delicious! you can also do this with peporoni and provolone

  • Breakfast Pizza. Buy the store premade shells, brown them in the oven, add scrambled eggs, with sausage and cheese. Spinach, eggs, cheese. All vegie's. The options are endless and everyone always enjoys them.

  • This is my favorite breakfast. a good summer alternative to oatmeal. Cook 1 cup of quinoa in 1 cup of water and one cup of apple juice, chill. Dice 2 small or 1 large apple small dice and add, add dried raisins and/or cranberries and walnuts - 1/4-1/2 cup of each. Stir in vanilla yogurt to coat and make it bind together, 1 - 1-1/2 cups. Serve cold.

  • Breakfast Casserole

    SERVES 8 -12

    * 2 tablespoons butter
    * 1/8 teaspoon pepper
    * 2 tablespoons flour
    * 2 cups milk
    * 12 eggs
    * 1 lb bacon, chopped
    * 1 cup shredded cheddar cheese
    * 1/4 cup onion, chopped

    * 1 (4 ounce) can mushroom stems and pieces
    * 1 1/2 cups soft breadcrumbs
    * 3 tablespoons melted butter
    * 1/8 teaspoon paprika

    Melt butter.
    Blend in flour and pepper.
    Gradually add milk and stir until thickened.
    Add cheese; mix and set aside.
    Fry bacon and onions until browned.
    Add eggs and scramble just until set.
    Add mushrooms and cheese sauce and put into a greased baking dish (9x13-inch).
    Mix breadcrumbs with 3 tablespoons melted butter and paprika; sprinkle over egg mixture.
    Chill for 30

  • Chill for 30 minutes at least OR put in fridge overnight.

    To serve, bake for 30-minutes in a 350F oven.
