What are fun ways to serve veggies?

This is as much for me and DH as it is for our son.

  • sweet potato baked "fries"
    with peanut sauce (super yummy)
    pot pie
    veggies stew (I make about 5 different kinds in the crockpot, like veggie stew with dumplings)
    fatoush (a middle eastern salad)
    sweet potato and black bean burritos
    avocado salad
    squashed macaroni
    ginger stir fry
    Indian curries
    grilled veggie skewers
    sweet potato pudding (can you tell that I love sweet potatoes?)
    raw marinara with zucchini "noodles"
    spaghetti squash with alfredo sauce
    zucchini enchiladas

  • One thing DH and I want to do with our kids is either buy a tiny grill or a small fire pit. We let the kids pick out veggies, and while one of us is cooking the rest of the meal, the kids can help roast the veggies. They can even help add spices. TO be safe, whoever isn't cooking dinner will hold their hand as they hold the veggies over the fire, of course. Its a lot of fun, and they'll want to eat it because they got to help cook!
