  • Why risk it?

When you hear of people getting sick on potato salad left out, it's the egg in the salad or the mayo in the salad that makes them sick.

    Compost it.

  • I wouldn't. You shouldn't eat any food that is left out for more than 2 hours.

  • I would not. Bacteria in food grows fastest at temps of 90-140. 2 hours is the maximum perishable foods should be left out at room temperature. If the water was not boiling hot for that whole time, I would not eat them. Better to be safe than sorry, and it's not worth the price of a few eggs to risk food poisoning.
