  • I'm all for fish and veggies then fresh fruit for dessert. I bought some great mahi mahi for only $1.45 a big piece.

  • Mmm... we do a few things.
    Chicken Caesar wraps is a huge favorite. Just chicken strips, Caesar salad dressing, lettuce, and flour tortillas, croutons too. Yummy!

  • Lentils are really cheap, especially the dried, and they are loaded with iron, calcium, protein, fiber, etc. They are also very versatile; use them in soups, stews, tacos, sloppy joes, etc.

    Dried beans are another great option; they can be used in so many dishes, too. salads, Mexican foods, Indian curries, etc.

    Whole grains are much more filling than their simple counterparts, and have more nutrition (like protein and fiber). They can be used in so many different dishes: peanut noodles, stir-fry (with tofu and veggies), etc.

  • When I have visitors and no money, I make my own pizza. Flour's cheap. Sauce and cheese aren't much.

  • Hawaiian turkey burgers with roasted potatoes:

    1 lb lean ground turkey
    seasonings (I like to use Montreal hamburger seasoning)
    barbecue sauce
    1 pineapple (or 1 can pineapple rings)
    burger buns
    small bag small red potatoes

    Heat oven 425. Wash potatoes. Cut in 1/4. Toss with olive oil and italian seasoning. Spread on cookie sheet. Bake for 20-30 minutes til crisp and browned.

    Mix turkey with the hamburger seasoning. Shape into 4 patties Spray grill rack or griddle with non-stick cooking spray. cook patties for a few minutes on each side til the middle of one patty is done when cut in half. While burgers are cooking, peel and core the pineapple. slice into 1/4" thick slices. Toss on the grill for a minute or two per side til the sugars are caramelized. Toast 4 burger buns (with split sides up) til lightly toasted. Spoon on a thin smear of barbecue sauce, top with the patty and pineapple. Serve with potatoes.
