Lentils are really cheap, especially the dried, and they are loaded with iron, calcium, protein, fiber, etc. They are also very versatile; use them in soups, stews, tacos, sloppy joes, etc.
Dried beans are another great option; they can be used in so many dishes, too. salads, Mexican foods, Indian curries, etc.
Whole grains are much more filling than their simple counterparts, and have more nutrition (like protein and fiber). They can be used in so many different dishes: peanut noodles, stir-fry (with tofu and veggies), etc.
