I need a recipe for cornbread in a 13x9 pan or for a small casserole dish... Any help?

    * 2/3 cup butter or margarine, softened
    * 1 cup sugar
    * 3 eggs
    * 1 2/3 cups milk
    * 2 1/3 cups all-purpose flour
    * 1 cup cornmeal
    * 4 1/2 teaspoons baking powder
    * 1 teaspoon salt


    1. In a mixing bowl, cream butter and sugar. Combine the eggs and milk. Combine flour, cornmeal, baking powder and salt; add to creamed mixture alternately with egg mixture.
    2. Pour into a greased 13-in. x 9-in. x 2-in. baking pan. Bake at 400 degrees F for 22-27 minutes or until a toothpick inserted near the center comes out clean. Cut into squares; serve warm.

  • South Western Yam and Chili Cornbread
    1/2 cup butter or margarine
    1/4 cup granulated brown sugar
    1 egg plus 1 egg white
    1 tbsp. orange juice
    1 cup cooked, mashed sweet potato
    1/2 cup milk (plant or animal)
    3/4 cup yellow or white cornmeal
    3/4 cup unbleached flour (i use whole wheat pastry flour)
    1 tbsp. baking powder
    1/2 tsp. each cinnamon and cardamon
    1/2 tsp. salt
    1/2 cup thawed frozen corn kernels
    4-oz. can chopped green chilies, rinsed
    Preheat oven to 350 degrees. In an electric mixer or food processor, add butter; cream until fluffy, 1 1/2 minutes. Add sugar; pulse 1 minute. Add egg, egg white, orange juice, sweet potato, and
    milk. Add dry ingredients; mix well. Fold in corn and green chilies by hand (batter will be thick.) Divide mixture into two 9-in. pie tins coated with nonstick cooking spray. Bake until tester inserted
    into center comes out clean, about 15 minutes. Remove to rack t

  • I buy mine at the store in a box it's a white box with red lettering I think, it's really good and it fits in that pan size.

  • From the back of the Aunt Jemima Cornmeal bag:
    Golden Corn Bread:
    1 cup yellow corn meal
    1 cup flour
    2 to 4 Tbsp. sugar
    4 tsp. baking powder
    1/2 tsp. salt
    1 c. milk
    1 egg
    1/4 c. vegetable oil
    Combine dry ingredients. Add milk, egg and oil. Stir about 1 minute. Pour into greased small casserole dish. Bake at 425 degrees 15 to 18 minutes. Double the ingredients for a 9 x 13 pan and you may need to increase baking time. Test with a pick for doneness (pick comes out clean.)

  • 2 boxes Jiffy corn bread mix
    1 can (15 oz) cream style corn
    2 eggs
    2 1/2 tbs brown sugar

    Spray 2 8x8 or 9x9 pans with cooking spray. Preheat oven to 350 degrees. Mix all ingredients together. Pour into prepared pans. Bake 4 minutes LESS than directed on box.
