  • Here's a great recipe from a low glycemic index diet plan:

    Spicy Chicken Strips with Fresh Salad and yogurt

    -1/2 tbsp. olive oil
    -4 oz. boneless chicken breast
    -1/4 tsp. cumin
    -1/4 tsp. chili powder
    Rinse and cut the chicken into 1/2-inch strips. In a non-stick skillet, heat oil on medium-high. Sprinkle strips with spices and sauté until done.

    Fresh Salad
    -2 cups mixed salad greens
    -8 cherry tomatoes
    -1/2 bell pepper, green
    -1/4 small red onion
    -2 tbsp. olive oil and vinegar dressing (light)
    Rinse and pat dry salad greens. Rinse tomatoes and pepper; cut tomatoes in quarters and slice pepper and onion into very thin slices. Place all vegetables in a large salad bowl; pour dressing on top, mix well and serve.

    Also Include: 1/2 cup light or nonfat yogurt as this is part of the meal!

  • These are from the South Beach Diet and soooo good. Balsamic glazed salmon and chicken breast stuffed with spinach and goat cheese. My mouth is watering. Mmmmm.
