corn muffins w/out milk?

I was thinking about making some corn muffins as a side dish for dinner, but I am super low on milk and cant make it to the store right now. are there any good and easy recipes for corn muffins w/out milk...and w/ basic ingredients (I have just about everything basic in the kitchen but milk lol)???

  • Do you have sour cream?
    * 1/2 cup all-purpose flour
    * 1/2 cup cornmeal
    * 3 tablespoons sugar
    * 1/2 teaspoon baking soda
    * 1/2 teaspoon salt
    * 1 egg
    * 1 cup sour cream
    Mix dry ingredients together and add egg & sour cream, stir well. Fill greased muffin cups 2/3 full. Bake at 400 degrees for 15 to 18 minutes.

  • i might not have enough sour cream, I've used a lot of it for macaroni and cheese, but i will def. keep this recipe in mind! TY =)
