  • I serve this it over steamed broccoli (and I make double the sauce).
    Pasta and Tofu with Finger-Licking Peanut Sauce
    1/2 cup low or no sodium vegetable broth
    1/4 cup chunky peanut butter (I use smooth)
    1/4 cup low-sodium soy sauce
    3 tablespoons brown sugar
    2 tablespoons rice vinegar
    2 teaspoons grated peeled fresh ginger
    2 teaspoons chile paste with garlic (add to taste, it is pretty spicey)
    4 garlic cloves, minced
    8 ounces uncooked whole wheat angel hair
    1 pound firm tofu, drained and cubed (optional)
    1 cup (2-inch) sliced green onions
    1 cup shredded carrot

  • Combine first 8 ingredients in a small saucepan. Cook over medium heat 5 minutes or until smooth, stirring frequently (this can also be done in the microwave; use a tempered glass bowl, like pyrex, cook for 20 seconds, stir, repeat until smooth). Remove from heat. Cook pasta in boiling water 8 minutes, omitting salt and fat. Add tofu, onions, and carrot; drain. Place pasta mixture in a large bowl. Add peanut butter mixture; toss gently.

  • Ramen noodle casserole, sloppy joes, chicken in gravy over biscuits...I can't pick a favorite because all 7 people in the family enjoy many of my meals. These are three of the meals that I'm sure to have the ingredients to make them.

  • southern crispy fried chicken tenders, burgers, breakfast for dinner, or chicken stir-fry (my kids LOVE veggies)

  • bbq chicken brown rice and corn

    brown rice

    bring to a boil 1/2 stick of butter, 1 can of french onion soup, 1 can of beef consume soup, and 1 can of water, add rice, return to a boil and bake in preheated oven 350 for 30 min. we like to mix our corn and rice togehter when its cooked. Easy simple and so delicous

  • Chicken Rice

    i cook up some frozen chicken breasts & pour a can of cream of mushroom over it. i add some oregano & balsamic vinegar & let it simmer till thick. i cook up 2 cups of rice & serve the chicken & soup gravy over the rice. SOOO warming & good!

  • Actually I get bored pretty easy, so i try something new all the time. But one of my current faves is Cheesy brat stew. I go to for alot of great ideas. I am actually on a buffalo chicken salad kick right now lol
    And I love anything that can be cooked on the grill
