  • my mom makes this strawberry stuff (haha yes that is what we call it) that is really good, simple, and actually healthy. Ingredients are angel food cake (crumbled into smaller pieces), sliced strawberries, fat free whip cream, and strawberry jello. You make it in layers. Start with a layer of angel food cake, prepare jello but don't let set (pour it over angel food cake), then a layer of whip cream, layer of strawberries, and repeat until you are happy! Then just refrigerate and let the jello absorb into the angel food cake.

  • ZUCCHINI BROWNIES
    1 3/4 cup whole wheat pastry flour
    1/3 cup baking cocoa
    1/2 tsp baking soda
    1/2 tsp salt
    1/2 cup evaporated cane juice (any dry sweetener)
    1/2 cup date sugar(any dry sweetener)
    3 cups zucchini, grated
    1 egg
    1/2 cup yogurt
    1/2 cup coconut or vegetable oil
    1 tsp vanilla
    1/2 to 1 cup grain-sweetened chocolate chips
    1/2 cup chopped walnuts, optional
    Preheat oven to 350 degrees F. Combine flour, cocoa, baking soda, salt, evaporated cane juice, and date sugar in large bowl. Stir until blended. You might need to use your hands to break up and blend in the date sugar. Stir in zucchini. In separate bowl, whisk together egg, yogurt, oil and vanilla. If it all seizes up, it's OK. Stir liquid mixutre into zucchini mixture with a wooden spoon.
    Spread evenly into greased 9-by-13-inch pan. Sprinkle chocolate chips and nuts on top of batter.
    Bake 35 to 40 minutes or until toothpick inse

  • The layer thing is super quick and always good. Any kind of cake mix. Bake cake. Cool, cut into pieces. Make some pudding. Let it get stiff. Layer in a pretty clear bowl and put cool whip between the layers. YUM. The chocolate cake and chocolate pudding is my fav. But you can do any flavor!
