Recipe: Macaroni Salad

Does anyone have an easy recipe for macaroni salad for about 20-30 people?Nothing fancy just a plain macaroni salad.

  • Boil macaroni, whatever kind you want to use...I usually use elbow macaroni or something else on the small side. Mix mayo, balsamic vinegar, brown sugar, a little salt, pepper, a little mustard in a bowl. I don't know specific amounts...I just do it to my want that kind of sweet but salty taste, if that makes sense. Get whatever veggies you want in your salad....I usually do peas, red onions, kidney beans....whatever else I have and you obviously can use whatever you want. Drain the pasta and rinse it with cold water. Add in veggies and dressing and mix together and tada!

  • This macaroni salad is made with hard-cooked eggs, chopped vegetables, and a seasoned mayonnaise dressing. Scroll down to see more macaroni salad recipes.
    •2 cups cooked macaroni, drained, rinsed, cooled
    •2 hard-cooked eggs, chopped
    •1/4 cup chopped celery
    •1/4 cup chopped onion
    •1/3 to 1/2 cup mayonnaise or salad dressing
    •2 teaspoons sugar
    •2 teaspoons vinegar
    •1/2 teaspoon salt, or to taste
    •1/2 teaspoon prepared mustard
    •pepper, to taste
    Combine all macaroni salad recipe ingredients, using about 1/3 cup of mayonnaise and stir well. Add a little more mayonnaise, if necessary. Taste and adjust seasonings. Cover and chill for several hours before serving.

  • This was on a box of diced mixed veggies I bought at Costco (green beans, carrots,corn). I bought the veggies to throw in soups & stews, but could not resist this recipe:
    1 cup uncooked spiral or bow pasta
    1 12oz bag Bybee Foods Organic Garden Trio
    4 diced Roma tomatoes (I use halved grape tomatoes)
    1/2 cup finely chopped scallions (I use sweet onion)
    1/2 cups feta cheese, crumbled
    2 Tbl chopped red onion (again, I use a sweet onion)
    2 cloved finely chopped garlic
    4 Tbl olive oil
    1 Tlb white vinegar
    2 Tbl water
    1 Tbl finely chopped thyme
    1 Tbl finely chopped basil
    (instead of the two above, I used 2 Tbl herbs d'Provence)
    fresh ground pepper to taste
    Cook pasta, drain,rinse with cold water. Cook vegetables as directed (I used a covered glass dish in the microwave) & cool. Combine ingredients for dressing, whisking in olive oil last. Combine ingredients, toss with dressing, sprinkle
