anybody cook barley in your meals?

I am trying to find healthy simple things to make. I bought some barley the other day and was going to fix it for dinner tonight. I went on allrecipes.com and all of the recipes there are for beef and barley soup or some other sort of soup... I am making it as a side to a pork loin that we are grilling. The pork loin is marinating in teriyaki sauce. Any help is appreciated!

  • An easy pork shoulder roast, cooked in the crockpot with sauerkraut and barley.
    Cook Time: 10 hours

    Ingredients:

    1 pork loin roast, or pork shoulder, about 3 to 4 pounds
    4 cups sauerkraut, drained and rinsed well
    1 onion, thinly sliced
    1/2 cup pearled barley, rinsed and drained
    2 bay leaves
    1/2 teaspoon pepper
    1 cup water
    Preparation:

    Place pork in slow cooker. Top with sauerkraut and onion. Sprinkle barley over sauerkraut. Tuck in bay leaves and sprinkle pepper over top. Add water. Cook on low, covered, 10 to 12 hours. Remove pork, slice and serve with sauerkraut barley mixture.

  • I'm thinking you could try preparing it like you'd prepare rice. Maybe boil with seasonings and throw in some veggies (peas & carrots or mixed veggies). I have no experience w/ barley, but that's probably how I would approach it. GL!

  • Barley is a fantastic, healthy grain (you should try quinoa, next)!

    Barley and Vegetable Casserole
    1/2 cup uncooked barley
    1 can (14 oz.) vegetable broth (or 1.5 cups home cooked)
    1/2 cup red onion, chopped
    1/4 cup fresh mushrooms, chopped
    1/4 cup carrots, peeled and chopped
    1/4 cup green bell pepper, chopped
    1 TB chopped fresh dill weed OR 2 tsp. dried dill weed
    1/4 tsp. salt
    1/4 tsp. ground black pepper
    1/4 cup (4 medium) green onions, chopped

    Preheat oven to 350° F. Spray 10" skillet and 2 quart casserole with cooking
    spray. Cook barley
    in skillet over medium heat about 8 minutes, stirring constantly, until light
    brown. Stir in remaining
    ingredients except green onions; heat to boiling.

    Spoon mixture into casserole. Cover and bake about 50 minutes or until
    vegetables are tender.
