anybody cook barley in your meals?

I am trying to find healthy simple things to make. I bought some barley the other day and was going to fix it for dinner tonight. I went on and all of the recipes there are for beef and barley soup or some other sort of soup... I am making it as a side to a pork loin that we are grilling. The pork loin is marinating in teriyaki sauce. Any help is appreciated!

  • I'm thinking you could try preparing it like you'd prepare rice. Maybe boil with seasonings and throw in some veggies (peas & carrots or mixed veggies). I have no experience w/ barley, but that's probably how I would approach it. GL!
