  • I make a hashbrown skillet. I saute veggies in olive oil and a bit of butter (for flavor) in a frying pan. I use green pepper, onions, garlic; once those are soft. I add frozen, shredded or cubed hashbrowns and cook until desired doneness (I like mine a little crispy). I then add shredded cheese and fry a couple of eggs on top, usually overeasy because I mix it all together and like the yolk mixed in. I serve with toast and fruit. Well, crispy bacon too but you didn't want meat. LOL!!
