do you mix the top layer of oil in natural peanut/almond butter?

just bought a jar of natural almond butter from whole foods and it's got a thick layer of oil on top. can i spill out the oil, or are you supposed to mix in the oil?

  • I don't know about almond butter, but with peanut butter i mix it. I'd assume you do the samme wiht almond

  • Regular PB has emulsifiers in it to make it creamy... natural PB's, nut butters do not.. they need to be mixed with the oil that collects on top or the butter will not be emulsified properly.

  • mix. It's just the natural occurring oils that seperate over time. Mix away.

  • Mix it. Refrigerate after opening. Store upside down.
