Does anyone know of any penne noodle recipes for dinners?

I am just carious! I also want to know what kind of good and easy lunch and dinner recipes are out there?

  • the other night when the cupbords were bare and I had 3 extra's here I put in some smoked sausage a package of gumbo style veggies and some bratwurst with some tomato sauce and creole seasonings. It was good! Pasta goes with anything!

  • Baked Ziti and Bean Casserole
    1 28-ounce can whole tomatoes, drained
    1 cup ricotta cheese (I use 1/2 tofu)
    1/4 cup chopped red onion
    1 tablespoon chopped fresh parsley
    1 tablespoon chopped fresh or
    1 teaspoon dried thyme leaves
    1/2 teaspoon salt
    1/4 teaspoon crushed red pepper
    4 cups hot cooked whole wheat ziti or penne pasta
    1 15-ounce can great northern beans, rinsed and drained (or 1/5 cups home cooked; any bean will do)
    3 slices part-skim mozzarella cheese, about 6-1/2 X 4 inches
    grated Parmesan cheese, if desired
    Heat oven to 400 degrees. Spray or oil a rectangular baking dish, 11x7x-1/2 inches, Break up tomatoes in large bowl. Stir in ricotta cheese, onion, parsley, thyme, salt, red pepper. Gently fold in pasta, beans. Pour pasta mixture into baking dish, spread evenly. Arrange mozzarella on top. Bake uncovered about 30 minutes or until mixture is hot & cheese is golden brown. Sprinkle with Parmesan che

  • I cut up zucchini, squash, green peppers and onions, and saute in a bit of olive oil. I also cut up Italian sausage in coins and add to the veggies. I add canned diced tomoates and pour over penne pasta. I also make penne pasta and just add spaghetti sauce and Parmesan cheese.
