Huge Bone-In Chicken Breasts. What to do with them?

I mean these suckers are huge! any thoughts?

  • Cook them, bone them and shred them for enchiladas or casseroles

  • I would put them in a big pot with some chicken broth and seasonings, cook for a good hour, hour and a half...remove the chicken, strain the broth, add celery, onions and carrots...remove meat from bones, add to pot, add noodles or rice and have a nice giant pot of soup. Yum. Portion out and freeze the leftovers.

  • pound them with a meat mallet, put ina square of spinach souffle fold chicken over the souffle, brown in a pan for about 7 minutes, bake in 350 degree oven for about 30 minutes. YUM
