Help making yeast rolls!

I have followed the two recipes below. Both times my yeast got all frothy but both times my rolls didn't rise like this. They weren't fluffy but instead were dense. Tasted fine but very heavy. Please tell me what I am doing wrong!

  • The last batch of rolls I made the dough started out tough. My yeast isn't expired and it did smell like yeast.

  • Was there a yeasty smell too? You may have overkneaded the dough. I find that yeast doughs come out best when I use the dough cycle on my breadmaker.

  • Another tip is to make sure that your yeast packet is not expired... that happens and then it's not active anymore.

  • Did you let them rise twice? For rolls, you rise once in the bowl, then you shape them and let them rise a second time.

    When I've made rolls at home, I find they're really dense and hard if I forget the second rise or rush it.

  • let them rise longer. The dough needs to rise at least twice the size it was to begin with both times.
