any substitutes for vanilla in cookies?

Ladies I want to make cut out cookies with my kids. Unfortunately we don't have any vanilla extract in the house. I don't have an opportunity for awhile to get some...and my kids are expecting dough for cut outs...we're making leaves, and pumpkins..

I was thinking of maybe substituting the vanilla with just almond extract. Would that work? The only other extracts I have in the house at this time are lemon extract and mint extract.

Thank you for all your help.

  • I actually prefer to substitute almond for vanilla. Especially if I am making shortbread cookies, my favorite to cut out.
