  • Baked spaghetti.
My DIL loves ravioli lasagna. I don't know the recipe exactly, but she layers raviolis with lasagna cheese.
If you like salads, there's a great main dish salad I make - layered in a big bowl, glass if you have one to show the layers. Layer lettuce, chopped cooked egg, chopped cooked potato, chopped cooked bacon, peas, chopped onion, green pepper, tomato, cheese, ... and then whatever else grabs your fancy. Top with about a cup of mayo mixed with a teaspoon or two of sugar. Yum!

  • I often make chicken. I have grandkids so I started cutting the chicken tenderloins in bite size pieces. I lightly roll them in a mixture of flour, parmesan cheese and whatever spices we want. (when I'm alone I use really spicy stuff but not when the grandkids are here). The small pieces allow me to fry them in olive oil & minced garlic quickly. If I am home alone I brown them up and then simmer them in jalapeno juice but if the gks are here I skip that. Tonight I had that and a salad and left over spinach from last night. It was amazing, cheap and quick to make with little clean up.
