  • what do you have to work with? If I'm in a rut I check out and scan through the millions of recipes until something pops up everybody will eat

  • Last night we had steak with sauteed onions and mushrooms, mashed potatoes, pasta salad and homemade baked beans. Tonight I think we might order some chinese take out. I have been wanting it for a while. But that is what I do when I don't know what to cook, I order out.

  • I'm having a Penne toss w/cheese:
    1 thinly sliced red onion
    1 med red or green pepper cut into strips
    3 tbsp water
    1 can diced tomatoes
    2 tbsp chopped fresh parsley divided
    2 tbsp chopped fresh basil divided
    1/2 cup shredded mozzarella
    1/2 cup shreddded parmesan
    Cook pasta according to directions and save 1/2 cup of pasta water
    Cook onions, pepper, water for 5 minutes. Add tomatoes and herbs, simmer for 10 minutes. Drain pasta, put in bowl. Add tomato mixture and pasta water. Stir in mozzarella. Stir in the rest of the herbs and Parmesan.
    The fresh herbs make it a very fresh and clean tasting dish. Usually I make a salad and buy some rolls from the store. My picky 4 year old and 2 year old LOVE this. And it's very fast to make.

  • Oh yeah, I forgot to include a 12 oz box of penne (because it holds sauces better) in the recipe.

    Sunday–black bean soup, quesadillas, avocado salad
    Monday–lentil tacos
    Tuesday–mushroom stroganoff
    Thursday–peanut noodles
    Friday–Mediterranean stew
    Saturday–pot pie
    Week of 10/11
    Monday–not crab cakes, tofu fish sticks, baked sweet potato “fries”
    Tuesday–peanut noodles
    Wednesday–tamale bean pie
    Thursday–Mexican bean and pasta bake
    Friday–breakfast for dinner – pancakes and fruit
    Saturday–pizza (on the grill, weather permitting)
    Week of 10/4
    Sunday–white chili
    Monday–lentil sloppy joes
    Wednesday–southwest falafel
    Thursday–zucchini and cheese enchiladas

  • Texas Has (aka shredded bbq beef)
    1 1/2 c. bbq sauce & ketchup, 12 oz bottle chili sauce (Heinz brand preferred), 1 c. chopped onion, 1 c. water, 3 1/2 tbs brown sugar, 2 tbs + 1tsp worcestershire sauce, 1 tsp liquid smoke (optional), tabasco to taste (about 1/4 tsp-optional). Mix all together. Place 4-5 lb boneless chuck roast in the crockpot, pour sauce over all. Cook on low 8-10 hours or 5-6 hours in high (comes out better on low). Let stand at room temp for 1 hour then skim fat off sauce. Remove meat from sauce & shred with forks. Add reserved sauce to taste (about 2/3). This makes enough for 10 people but freezes well.

  • Tonight we are having a new recipe so dont know if it is good....sounds good. Hoagie Bake. It is crescent rolls layered with salami, pepperoni, ham, provolone, swiss, and topped with creamy italian dressing and baked in the oven. You put scrambled egg into it but I am not sure about that. I got it from I log onto all recipes FIRST THING every time the computer comes on.

  • Tonight we are having beef dip sandwiches. Leftover sliced roast beef on ciabatta rolls w/melted cheese and au jus dipping sauce. With tater tots and salad. Not very exciting but good and I don't know what you usually make so thought I'd throw it out there. Last night we had chinese chicken salad w/homemade pumpkin soup though and that was different (I thought). I want to eat at "rkoloms" house! I see her menus posted alot - she has it going on for sure!

  • We are having salmon,brown rice and broccoli.I marinade the salmon in a ziplock with soy sauce,o.j. or pineapple juice or a can of crushed pineapple and minced garlic.Bake it at 350 for 15 -20 minutes.Cook the brown rice in broth with a little garlic powder,grated salt and pepper
