Meatless meals

Anyone have any great suggestions for meatless meals? I have a huge bag of dried kidney beans, a few cans of great northern beans, tons of rice and boxed potatoes lying around. They don't necessarily all have to go together but that's what I have handy if that helps with any recipes you might be willing to share. Thanks in advance!

  • Try googling for some clever bean recipes. You can season beans to really make them outstanding so that you don't really miss the meat!

    Bean patties (they have sauteed onion, red pepper, garlic and cumin, bread crumbs) top with cheese and serve with salsa. So good!

    Make a meatless chili with a variety of beans and spices, peppers, onions and tomatoes. Top with sour cream and cheddar. Don't forget the cornbread. I never miss the meat!

    Make a layered mexican dip and serve with tortilla chips. It's hearty enough to serve as a meal with a salad or corn on the side.

    What about eggs? It good protein, filling and cheap! Make cheese omelettes and serve with toast and preserves and some fruit or juice

    Mushrooms can be cooked in beef broth, garlic and worcestershire sauce and served with rice or on buns as a sub for beef! They really pick up the flavor of whatever you cook them in.

  • "Earthburgers" (one of my favorites- i finally took the time to write the recipe down)

    1 cup dry lentils (i would use the little french ones)- cook them until they are tender, but not smooshy.
    1 med onion, diced
    3-4 large mushrooms diced
    2 eggs
    1/2 cup oats
    1/4 cup breadcrumbs (or cracker meal- or flour)
    olive oil
    2 tsp garlic powder
    1 tsp coriander
    1 tsp onion powder
    1 tsp sage (rubbed)
    1/2 tsp thyme
    1/2 tsp ground pepper
    1/2 tsp salt
    2-3 tsp worcestershire sauce
    1-2 tsp liquid smoke

    caramelize onion & mushroom in olive oil. add to lentils, add all seasonings & breadcrumbs, toss together and let sit for a few to hydrate crumbs. slightly mash, add the eggs & oats. form into patties (makes 10) & cook over med/low flame in a little olive oil (wet hands before forming into patties). cook until slightly brown on both sides. burgers will be firm when fully cooked.

  • You can make a white chili with the great northern beans. The recipe I use calls for chicken but, you could leave that out. I also love beans and rice.
