What do you do with avocado if you don't make guacamole?

I love avocados and i'm trying to learn new ways to add them to our diet. I know about adding them to salads and tacos. What else?

  • I love them sliced as a side or on sandwiches. A restaurant I go to cuts them in half, removes the seed, and fills them with chicken salad (served with tossed salad and pineapple rings).

  • They are a great topper for a lot of soups. I love them on tortilla soup.

  • Diced on top of chili
    Mashed on a piece of toast with sliced tomato and sea salt
    Healthy Pudding: Avocado Pudding
    2 avocado's peeled and pit removed
    1 tablespoon Coco Powder
    1 teaspoon Vanilla extract
    1/4 cup maple Syrup
    2 dates soaked in warm water
    blend in blender till smooth

  • avocado and grapefruit or orange salad with just a little poppy seed dressing.Toss together or with greens yummy.Layered with tomatoes instead of fresh mozzarella cheese.Sea salt,ground pepper and a light drizzle of evoo.Take lump crab meat toss with a very little roumalad and serve in avocado half.Much more work but good for dinner party=make fried green tomatoes ,Layer a fried green tomato,then small layer of crab meat then slices of avocado,Repeat once more.Drizzle lightly with roumalade

  • Put it in tuna fish salad in place of mayo, but still add a touch of mayo. Its so creamy and may sound yucky but it is really good. My kids love it.

    Cucumber avacado salsa with lime.

  • Slice and eat. Smash and use in place of mayo on a sandwich. Slice and put on cheeseburgers. Chop up in salsa.

  • Shrimp Stuffed Avocados

    1½ tablespoons lemon juice
    2 tablespoons olive oil
    1 teaspoon Dijon mustard
    salt and pepper to taste
    1/2 cucumber, peeled, seeded and diced small
    1 stalk celery, diced small
    8-oz package cooked salad shrimp, thawed if frozen
    2 ripe avocados, each cut in half lengthwise, stone removed

    Combine lemon juice, oil, mustard, salt, pepper, cucumber, celery & shrimp.
    Spoon into avocado halves

  • When I ate gluten... mashed avocado on a toasted english mufiin with shredded carrot, cream cheese, lemon juice, and salt and pepper.

  • I add it in to smoothies - my kids favorite is a rainbow smoothie - strawberries, mango, carrots, banana, kiwi, blueberries, avocado, and I know there was more but that's the main stuff. I freeze my fruit (whole berries, peeled & quartered kiwi, chunked mango, sliced banana) and throw it in with the rest fresh, and some water or juice to cover & blend. I prefer to use apple juice OR orange-tangerine juicy juice for this one.
