What do you do with avocado if you don't make guacamole?

I love avocados and i'm trying to learn new ways to add them to our diet. I know about adding them to salads and tacos. What else?

  • I just chop it up and sprinkle it with lemon juice an salt. Then I eat it with chips. I've read that avocado can take the place of mayonnaise in most recipes and can be substituted for tofu in vegetarian and vegan recipes as well.

  • Mash it up and spread it on bread for sandwiches in place of mayo. Its really good on turkey sandwiches with swiss or provolone cheese :-)

    Also you can shop it up and put it in homemade burritos (ground meat, taco seasoning, cheese, tomato/lettuce/onion/peppers, sour cream and chopped avocados rolled in a tortilla).

    We love avocados and they are a great source of healthy fats.

  • I use them as weapons and throw them at people. (Kidding.)

    My son loves them. I'll have to tell him how Kelly does it. He gets them with good intentions of making something with them, or adding them our veggie loaf recipe, and more often than not just gives in and eats it as is. We're kind of odd here, so sometimes he gets them in his Christmas stocking or the Birthday Basket, 'cause they are kinda pricey.

    You could chop or puree them and add them to all kinds of things, I should think. Experiment with adding different spices and maybe other things you like and create a sandwich spread from them. (Note to self:::: self, tell that one to boy child.)
