I had an idea...

My MIL was bragging to her boyfriend about my chicken pot pie & mac n cheese this past week. Me being pregnant & her boyfriend just being a man, I suppose, looked at each other and said at the same time, "mac n cheese pie". I was thinking of regular baked mac n cheese, but instead of bread crumbs on top, a pie crust. How do you think that sounds?

  • That's a whole lot of fat and carbs in one place --eating that would definitely make me feel zoomy and weird for probably an hour after eating it...

    The best mac&cheese I've ever eaten, auroura, is this one (serves2):

    1c whole wheat macaroni (mmmm, cook it a little longer to make it as soft as white --it's got way better flavour)
    1/2c grated sharp (extra-aged) cheddar
    1 tbsp dijon mustard
    1/2c non-fat yogurt
    1 tbsp flour (no reason not to use whole wheat flour)
    1 tsp butter

    Stir together the cheese, flour and yogurt. Cook the pasta until it's as done as you like it, drain it and then in the same (empty) pot, melt the butter and mustard together. Toss the pasta back in and stir to coat. Toss in the cheese and yogurt mix and stir well. The hot pasta will melt the cheese and it will end up creamy and yummy (although not neon yellow like KD).
