What sides go with your spaghetti?

My MIL prefers broccoli. Of course, she loves broccoli with almost anything.
We're going to have some asparagus tonight with our spaghetti but i think i want another veggie side dish. Any suggestions?

  • I put spinach in our spaghetti, our boys love it in stuff just not plain. I also fix a salad and garlic toast.
    Or sometimes I make cheese sticks, or toasted ravioli.

    ...but i like to pump 'em full of the good stuff so MORE veggies are even better. :D

    Not in this Italian family! **grin** Spaghetti does cover all or nearly all the food groups (grain, veggies, protein if it's meat sauce, dairy if you put cheese on it...I love mixing in a bit of ricotta)...

    I guess you could call the salad a "side," although we serve that AFTER.

  • Ooh. Just thought of something, if it's not too late in your day already. My mom made the BEST spaghetti with broccoli. She'd saute the broccoli in a bit of olive oil with garlic. For the grownups, she'd toss in some red pepper flakes. Then she'd boil the spaghetti, reserve some of the water and mix with the broccoli, drizzling a bit of extra olive oil on.

    I haven't had it in ages because my husband doesn't like broccoli...but I might just make it for my son.

  • i just made zucchini cakes for supper

    shred about 3 c of zucchini, squeeze out the moisture, add one beaten egg, 1/2 c flour, 2 Tbl corn meal, 1/2 tsp salt, 1/4 tsp pepper, 1 tsp coriander & onion powder. mix well, drop by Tbl full onto lightly greased nonstick pan, over med heat. brown on both sides.... very tasty!
