Need Veggy side dish ideas for thanksgiving?

So My first thanksgiving my best friend calls and surprises me that her and her bf are coming up to spend it with my family super exited but she doesn't eat meat so anyone have some good side dishs that are meat free ????

  • some of our favorites are sweet potato casserole, squash, brussels sprouts, and green beans. We also do a Christmas Crunch Salad at is red, white, and green...tomatoes, cauliflower, and broccoli...very good!

  • We make a cream cheese vegetable casserole at Thanksgiving and Christmas. It's WAY yummy and different from the norm.

    Veggie Cream Cheesie Casserole

    1 – 16 oz. bag frozen broccoli, cauliflower, carrot mix
    1 red onion sliced thin

    Defrost veggies in microwave and drain. Put into 8x8 dish
    Slice onion and top veggies with it. Top with Sauce.

    1 cube butter
    4-5 Tb. Flour

    Make a rue. (Let butter and flour get thick and dark) Add 2 cups of milk. Cook until thick and bubbly. Take off stove and andd 8 oz. cream cheese. Mix and pour over veggies. Sprinkle with 2 cups cheddar cheese on top.

    Take one tube Ritz crackers and smash. Add ½ cup butter in skillet and mix. Put on top. Cook 25 min. at 350 degrees.

    It's very rich, but very good!
