  • Our fave:

    Frozen veggies: broccoli, cauliflower, carrots
    Cream of Mushroom soup
    Cheddar cheese

In long glass baking dish, place the chicken, then surround it with rice and veggies,
about 2 cups veggies and 1 cup rice. Add 8 pats of butter all around the food, then cover
with mushroom soup. Before adding soup, mix it with 1/3 cup of milk. Bake uncovered
on 350 for 1 hour, or until chicken, rice and veggies are thoroughly cooked. During last
15 minutes of baking, add shredded cheddar cheese to the top.

This is a HUGE fave in our home, and even neighbors ask me to cook it.

  • Homemade chicken nuggets:
    - Cut chicken into bitesize pieces.
    - Melt half a stick of butter, and put in a deep plate.
    - In another deep plate, mix 3/4 cup breadcrumbs, 3/4 cup parmesan cheese and salt and pepper.
    - Put the chicken in the butter first and then in the breadcrumb mix. Bake on a baking sheet in the oven at about 350-400 degrees. Turn half way, and broil for 5 min. at the end to make them crisp.
