What's your best recipe for BANANA NUT BREAD?

  • Here's a Southern recipe for ya ... this is a blue ribbon winning recipe

    Banana Bread
    ¾ cup Wesson Oil
    1 ½ c. sugar
    2 eggs – room temperature
    2 T. vanilla (use real vanilla)
    Beat at high speed until light and fluffy, then add:

    ½ c. buttermilk
    2 c. flour
    1 t. baking soda
    ¾ t. salt
    4 RIPE bananas (when you think they've gone bad), mashed well
    1 c. chopped nuts

    Bake at 350 in a greased and floured pan
    Mini loaf pans - - about 20 minutes
    Muffin tins – about 15 minutes

    1 stick butter, room temperature
    3 T. cream cheese, room temperature
    2T. half and half
    2 c. powdered sugar
    2 T. real vanilla
    Beat until smooth and creamy, and a little more powdered sugar as needed for consistency

    I like this one. I also add 1/2 cup dried pineapple, 1/2 cup coconut, and 1/2 cup nuts, either pecans or walnuts.

    It works well becuae it is such a moist recipe that adding these extras is fine. We call this one Pina Colada bread. YUM!

  • Banana Bread

    1/2 cup shortening (I use softened butter)
    1 1/2 cups sugar
    2 eggs(room temp)
    1/4 cup buttermilk
    3 lg bananas, mashed
    2 cups flour (I use half whole wheat pastry flour)
    3/4 tsp soda
    1/4 tsp salt
    1/2-3/4 cups nuts, chopped

    Mix batter ingredients in order shown. Pour into 2 greased and floured (or lined with parchment paper) bread loaf pans. Bake at 350 until done.

    I add a splash of vanilla and a shake of cinnamon.

    And it's Healthy!! Banana bread topped with salted sunflower seeds is the perfect combo of sweet and salty.

  • One year, because I love bananas and peanut butter, I added ground peanuts (ground using my little coffee grinder) to the recipe... OMG!!! It was SOOOO good
