Anyone with a pineapple upside down cake recepie?

I want to make a pound cake for thanksgiving,Im going to follow Paula Deens recepie....I was looking for something for pineapple upside down cake,something simple to follow

  • this one is super tasty!!!

    2 tbl spoon butter
    1/3 c packed brown sugar
    1 tbl spoon water
    4-6 pineapple slices (equal # of cherries if wanted)
    2 tsp baking powder
    1 1/3 c flour
    2/3 c sugar
    2/3 c milk
    1/4 c butter (softened)
    1 egg
    1 tsp vanilla

    in 9' round pan, combine 1st 3 ingred, melt. arrange pineapple & cherries

    combine all remaining ingredients and beat until smooth. gently spoon over pineapple and smooth (make sure not to move the pineapple!)

    bake @ 350 for approx 30 minutes. until toothpick comes out clean. remove from oven, cool for about 5 minutes, invert onto serving plate (loosen sides of care w/a knife first)

    thats about the easiest recipe i have found, and is really tasty...

  • 2/3C butter divided 2/3C firmly packed brown sugar 1 (29 oz) can pineapple slices in syrup
    10 maraschino cherries 3/4C sugar divided 2 eggs separated 1t grated lemon peel
    1t lemon juice 1t vanilla extract 1 1/2C all purpose flour 1 3/4t baking power
    1/4t salt 1/2C sour cream

    Melt 1/3C butter in a 10 inch cast iron skillet. Remove from heat. Add brown sugar , stir until blended. Drain pineapple well reserving 2T syrup . Arrange pineapple slices in sugar mixture in bottom of skillet. Place a cherry in the center of each slices, Beat reaming 1/3C butter with 1/2C sugar until light& fluffy Beat eggs yolks lemon peel , lemon juice ,vanilla. Combine flour. baking powder & salt. Blend into creamed mixture alternately with sour cream & 2T pineapple syrup. Beat eggs whites to a soft peak. Gradually beat remaining 1/4C 1/4C sugar to make to make a stiff

    meringue. Fold into butter. Pour over pineapple in skillet. Bake in a 350 degree oven for 35 minutes or un til cake is done. Serve warm or cold, Makes 8 to 10 servings.

    Just for your information This is a update recipe of a version of a 1920 favorite. IN 1910 pineapple was canned and shipped to this country from Hawaii. It was a new exotic fruit which quickly became poplar. By 1020 when a recipe contest was held 2,500 recipes for pineapple upside down cake were submitted. It has never lost it's appeal
