Help me use this pie crust!!!

We've had a very long, emotional week and I'd like to make a special dinner for my family. I have a few good ideas. I also have a Pillsbury pie crust left in the fridge that didn't get used for Thanksgiving. I usually stick to making my 3 favorite pies, but perhaps it would be fun to try something new! Anyone have a favorite pie recipe they'd like to share?

  • Butterscotch Pie

    One cup brown sugar, 2 tablespoons butter, 2 tablespoons flour, 2 egg yolks, 1/4 teaspoon salt, 1 teaspoon vanilla, 1 cup milk, 1/2 cup water, 2 egg whites beaten stiff, 4 tablespoons granulated sugar, and baked pastry shell.

    Beat together the brown sugar, flour, egg yolks, and salt; add the milk diluted with the water and cook in a double boiler until thick; add the vanilla, cool slightly and pour into the pastry shell. Cover with a meringue made with the egg whites and the granulated sugar; brown lightly in a very low oven.

  • Peanut Butter Pie

    8 oz. cream cheese 2 c. powdered sugar 1 c. peanut butter 1 baked pie shell 12 oz. non-dairy topping

     Instructions In large mixer bowl, cream peanut butter, cream cheese, sugar, and whipped topping. Pour into pie shell. Chill at least one hour. Top with additional whipped topping if desired

  • you could make a homemade pot pie with that crust..i did that with my thanksgiving left overs, it was really good!
