How can I get my cupcakes to stop sticking to the liners?

I have been toying with a few cupcake recipes and I want to have one really awesome one ...but most of the time I end up the liner taking off half of the cupcake! They are more muffin like in consistency.
What would help with that? I am at a loss!

  • Add a bit more butter than the recipe calls for.

  • I was going to say the same thing," More butter," or try crisco.

  • Use foil liners - a little more spendy but soooo worth it!
Skip the liners and spray your tins with the spray that has flour in it (I use Baker's Joy, it's the only one I can get).
Spray your paper liners with regular cooking spray - I do it with muffins and it works nicely!

I do all 3 of these, depending on the situation I need the cupcakes for.

  • Thanks....all good suggestions..I'll try them all. I was affraid it might be more of a recipe/mixture issue than a technical it's good to have options to fiddle with.

  • So is the cake soft and falling apart or dry and stuck to the paper? Go to You can find your issue and what's causing it and how to fix it.
