Why is the dough for my gingerbread cookies falling apart?

I chilled it for two hours as instructed but still, it is falling apart when I put the cookie cutter into it. Any ideas? For now, I have it chilling in the fridge.

  • Sounds like it's either too dry or too moist. If it's too dry, try adding an extra egg or a bit of water. If it's too moist, knead in some more flour.
