What's your absolute favorite muffin recipe?

  • Raspberry peach muffins:  1/2 c. butter, 1 c. sugar, 2 eggs, 1 tsp vanilla, 2 tsp baking powder, 1/4 tsp salt, 2 Tbsp. peach syrup from drained peaches, 2 c. flour, 1/2 c. milk or half & half, 1 c. fresh raspberries, 1 c. peaches in light syrup, drained & diced.

    Cream together butter & sugar until fluffy. Add eggs & mix well.  Add vanilla, baking powder, salt & syrup.  Add flour & milk alternately, mixing well after each addition.  Toss raspberries & peaches in a bit of flour.  Fold into batter.  Fill greased muffin cups about 2/3 to 3/4 full.  Bake at 375 for 20 to 30 minutes, until done.  Makes 18 to 20.

  • a extremely simple one.... Blueberry corn muffins (U can probably substitue for another fruit lol) i little box of Jiffy corn muffin mix, 1/2-1 cup of ur fav fruit (blueberries or strawberries, for me lol) 1/4 c sugar.

    Mix the corn muffin mix like the box states, then mix in the fruit and sugar, cook just like the box tell u to cook the corn muffins :), I had to add a little food coloring so my daughter would eat the blueberry ones lol. but they turn out great, and hubby loves them!! SO SIMPLE YET EXTREMELY YUMMY LOL

  • oh wow those raspberry peach muffins sound amazing! but i am going to have to say donut muffins from were a huge hit at my office.
