  • 4 big yellow onions chopped fine ...about 8 cups water... 4 cups rice ...1 bell pepper chopped ...3-5 crushed garlic cloves ...2 bundles green onions chopped ...2 lbs sausage chopped ...1 whole chicken cut up or pork. ...salt, pepper, red pepper, onion powder, whatever
    >Brown ur sausage & chicken& put them on the side. Cook down ur yellow onions & garlic constantly stirring.(add a little water if necessary so it doesnt get dry in the bottom of the pot) Don't burn them or the whole recipe is screwed. Once u sauteed this mix way down u add in ur meat & then ur water(add enough water to cover everything) Season to taste & cook everything until meat is tender. About 15 minutes before ur goin to add ur rice put in the gren onions. Add rice & bring to simmer for 15 minutes or until the rice looks to be getting cooked. Take big spoon & turn rice over once.(u only want to bring bottom to top) Leave on low heat until rice is tender

  • CHIMICHANGAS!!!! HEAVY BUT GOOOD! 1LB GROUND BEEF(more if cooking for a party or a big family), LRG TORTILLAS, SOFRITO, CHORRIZO, ONIONS, GRN PEPPERS, MONTERAY JACK CHS, DIECED TOMATO, MINCED GARLIC, ADOBO, SASON,(ALL VEGGIES SHOULD BE FRESH). BROWN THE GROUND BEEF, ADD SEASONINGS AND SOFRITO, WHILE ITS BROWNING COOK CHORRIZO IN ANOTHER PAN. YOU CAN SATEE THE VEGGIES IF YOU LIKE! ONCE EVERYTHING IS COOKED, WHILE PREPARING HEAT UP COOKING OIL TO FRY THEM. PLACE A SCOOP OR 2 ON THE LRG TORTILLA , ADD THE CHEESE AND THE VEGGIES AND FOLD IT LIKE AN ENVELOPE AND CLOSE IT WITH A TOOTH PICK(ISUGGES THE COLORED ONES SO THEY'RE EASIER TO FIND), FRY UNTIL GOLDEN BROWN. SERVE WITH SOUR CREAM AND OR SALSA AND AVOCADO IF YOU ENJOY IT. IT IS HEAVY SO YOU COULD SERVE WITH RICE, BUT I USUALLY DO SALAD. ITS A MEXICAN DISH BUT I ENJOY IT DESPITE BEING HALF PUERTORICAN!!!!

  • Send me a message offlist; these little boxes are too small for recipes. Be sure to let me know if you have any strong likes, dislikes or food allergies or sensitivities at your house.
