  • easy... buy a pink vodka sauce (they come in a jar now- or take 1 jar sauce + 1 half pint heavy cream & cook for a few min)
box of lasagna noodles (cook, drain, rinse, separate)
    8oz of parm & mozzarella & 16 oz ricotta + 2 eggs
8oz sliced mushrooms (you could use canned) sauteed
    10oz cooked &drained spinach

mix the ricotta & parmesan cheeses with the spinach & eggs- add seasoning of choice (herbs & garlic)
layer lasagna noodles on bottom of greased pan, add cheese mixture, mushrooms and top off with sauce... repeat until all ingredients are gone, top with sauce & mozzarella cheese. bake @ 350 until heated though and cheese is browned.

hope that was easy enough. :) thats how we do it here.

  • Just layer the ingredients in a pan, cover with foil, back at around 375 for about 40 minutes.
