  • Dried berries, shaved parmesan or feta cheese, pine nuts (toasted) or pecans crumbled, olives stuffed with blue cheese, onions, thinly sliced, tomatoes, cucumbers, the base for this is usualy spinach leaves crumbled up in a ball and sliced or shredded.
I also make a orzo arugula salad with dried up tomatoes in olive oil, roasted zuchinni, olives, (any kind) cook the orzo and flavor with garlic and herbs to taste, mix with arugula leaves while orzo is still hot so leaves will wilt. add feta cheese to taste.
For both of these I use the same dressing, two tablespoons of cream galric paste, 1 tablespoon of balsamic vinegar, two tablespoons of honey and mix, salt, pepper to taste and 1/4 cup of olive oil. Mix and pour over salad

  • I put lots of stuff in, but after I've picked out what I like, I end up with lettuce, onion, celery, radishes and cheese.

  • Depends on my mood and what I have. If I'm at a full buffet I'll get: lettuce, spinach leaves, onion/green onion (depending on what they have), green peppers, tomatoes (more if they have cherry or grape tomatoes), cucumber, green and black olives, a little cheese on top, maybe some turkey bits and those nuts they serve at salad bars and a drizzle of light Italian dressing although up until a few years ago I ate them sans dressing (I like that spray on dressing at home because it is a nice light coating).
