pancake mix (prepared)
coconut flakes or cruched cashews
peanut or any kind of cooking oil.
Cut chicken breast into 3-4 oz pieces. Pound flat for more even cooking. Dredge chicken in pancake mix, then coat with cashews or cocnut. ( you dip again if you want more coating. Saute chicken in 1/2 in cooking oil til golden brown and down at each side. (and until meat thermometer inserted into thickest part of chicken is 165 degrees).
Note: You can add flavors such as soy sauce, peanut butter, spicy seasonings, honey etc to the pancake mix for variation)
