  • we're making burritos! they LOVE "hand food" lol don't know why it evolved into that instead of finger food.

I make my own tortillas, the black beans are on the stove now- make some rice and chunk some tomatoes, sear some peppers... kid's will be thrilled! but then, they are not picky at all.

  • Kids will eat anything with peanut sauce: I serve this it over broccoli (and I make double the sauce).
Pasta and Tofu with Finger-Licking Peanut Sauce
1/2 cup low or no sodium vegetable broth
1/4 cup chunky peanut butter (I use smooth)
    1/4 cup low-sodium soy sauce
    3 tablespoons brown sugar
    2 tablespoons rice vinegar
2 teaspoons grated peeled fresh ginger
2 teaspoons chile paste with garlic (add to taste, it is pretty spicey)
    4 garlic cloves, minced
8 ounces uncooked whole wheat angel hair
1 pound firm tofu, drained and cubed (optional)
1 cup (2-inch) sliced green onions
    1 cup shredded carrot

    cont.

  • Combine first 8 ingredients in a small saucepan. Cook over medium heat 5 minutes or until smooth, stirring frequently (this can also be done in the microwave; use a tempered glass bowl, like pyrex, cook for 20 seconds, stir, repeat until smooth). Remove from heat. Cook pasta in boiling water 8 minutes, omitting salt and fat. Add tofu, onions, and carrot; drain. Place pasta mixture in a large bowl. Add peanut butter mixture; toss gently

  • I'm making Chicken Baseballs. The kids love them. Will probably serve them with mac & cheese (another fave) and a veggie.

    Chicken Baseballs

    3 ounces cream cheese
    2 teaspoons Country Crock, melted
    1/4 teaspoon salt
    1/4 teaspoon pepper
    1/2 tablespoon onion powder
6 ounces cooked boneless skinless chicken breast, cubed or shredded
    1 can Pillsbury Crescent Rolls
    2 tablespoons 2% low-fat milk
    bread crumbs, 1 tablespoon

In a blender (or by hand) combine cream cheese, butter, salt, pepper, milk, onion.
Blend. Pour mixture over chicken and stir. Separate crescent roll dough into four
rectangles and seal perforations. Spoon 1/2 cup mixture into center of each.
Pull opposite corners of dough to center and seal. Sprinkle each "baseball" with
bread crumbs and place on ungreased cookie sheet or pizza stone.
Bake at 350 degrees for 20 min

  • I'm thinking Chinese tonight, the kids devour chicken and broccoli. Tomorrow is grocery shopping day so our cupboards are pretty bare.

  • Whatever he wants, I am going out to dinner with the "girls". I will probably bring him back some chicken wings as a treat though.
