how can I fix some veggie dishes?

Does anyone have any good ideas on how I may fix some veggie dishes?

  • I have one I make that is super easy, cheap, and yummy!

    slice up some yellow squash and zuchini (although you can use any veggies you want really, I've also made it with asperagus, carrots, and some others) add some sliced mushrooms. toss with a little olive oil & garlic salt (or you can use Garlic & Herb Mrs. Dash) bake at 200 degrees for 1 hour. give it a stir about 1/2 way through
    you can also toss this veggie mixture with some cooked penne pasta

  • Check out Some of my family's favorites (though we usually just eat plain, I'll make these once in a while for a "treat"...Mix 1lb frozen corn with a couple tablespoons butter or margarine and a few ounces cream cheese. Mix, and pour into small crockpot or oven safe dish. Crockpot on high a couple hours, or in the oven half an hour or so. Can easily be doubled, I made it with 6lbs corn for Thanksgiving. Mix green beans with cream of mushroom, put into oven safe dish, and top with french fried onions. Bake til hot & onions are golden. Steam or boil baby carrots or sliced full-size carrots. When done, drain, and while draining, put a few tablespoons butter in same pan along with a few tablespoons brown sugar. Heat til it starts to caramelize. Pour carrots back in and stir or toss to coat (candied carrots). cont
