10 more avocados left--LOL!! Any ideas?

Hi last night I posted a question about what to make with avocados, tried the pudding, pretty good and the avocado pesto was amazing....Can I freeze guac? Any other ideas, I know there is some sort of avocado enchalida, help would be appreciated!!

  • You can also freeze the avocados. Cut in half and toss with a little lemon juice.

    I serve this with quesadillas and black bean soup: Avocado Tomato Salad

    2 Avocados, diced small
    1 pint cherry tomatoes, quartered
    3 tablespoons sweet onion, diced small
    1 jalapeno, finely chopped
    3 tablespoons cilantro, chopped
    2 tablespoons extra virgin olive oil
    2 tablespoons fresh lime juice
    Salt to taste
    1 head baby red romaine lettuce, trimmed and left as whole leaves
    1 medium head frisee, washed and chopped
    1 bunch watercress, washed and chopped

    Combine all ingredients in a large bowl, gently mix, and season with salt to
    taste. If preferred, add more cilantro and fresh lime juice to taste.
    Refrigerate for thirty minutes prior to serving.
    Just before serving, toss salad with romaine, frisee and watercress. Season
    to taste with salt and fresh black pepper. Serve immediately.

  • You can freeze guac if you get all the air out of the container. A plastic bag that you can squeeze will work the best.

    Turkey avocado wraps with bacon
    tuna salad filled avocado
    mashed with lemon on an english muffin

  • I make and freeze Guacamole all the time. I put the portions in foodsaver bags....zap all the air out and throw it in the freezer. Defrost in the frig overnight.

  • Mash and use in place of mayo on sandwiches and burgers. Yes, guac can be frozen.

  • I've read in multiple questions that you can freeze them whole. I know 5dollardinners.com has a few posts on them.

  • freeze or give as a gift. I would bet it would be nice in a quick bread batter with some crushed pinapple and macadamia nuts! It would be very moist! or a cake????

  • chilled avacado soup is good too. Garnish with crab meat

  • I don't know about food, but I'm a beauty queen, so I vote for making some homemade FACE MASKS!!! You can use them on your feet too. Soft and healthy!
