How early do I need to take brownies out of the oven? Since brownies finish cooking out of the oven, how un-done should they be when I take them out?

  • Toothpick test: Insert a clean toothpick 2 inches from the side of the pan, and if moist crumbs (but not streaks of batter!) are on it then it's time. If there's streaks, they're not done. My brownies never "keep baking". I take them out when the toothpick is clean 2 inches from the side and they're perfect. I do have to brag that I make the best brownies, I get scads of compliments on them.

  • Mmm brownies. Its going to depend on the amount of batter and the size of your pan. I usually do a 9x9 30 min or 8x8 35-40 minutes I think.
