Need a really good chocolate cupcake recipe?

My dd wants cupcakes for her birthday and I need a good homemade recipe? Something moist and yummy :)

  • Black Bottom Cupcakes (makes 12 cupcakes)
    Filling: 8 oz cream cheese, 1/4 cup sugar, 1/8 tsp salt, 1 large egg white, 1 tbsp sour cream, 1/4 cup mini chocolate chips (semi sweet)
    Cupcake: 3/4 cup all purpose flour, 2/3 cups sugar, 1/4 cup cocoa powder, 1/2 tsp baking soda, 1/4 tsp salt, 3/4 cup room temp water, 6 tbsp room temp sour cream, 4 tbsp unsalted butter, melted and cooled, 1/2 tsp vanilla extract.
    Preheat oven to 400 degrees. Filling; beat cream cheese, sugar, salt on medium speed until smooth. Beat in egg white and sour cream until combined. Stir in chocolate chips. Set aside.
    Cupcake: whisk flour, sugar, cocoa, baking soda, salt. Whisk in the water, sour cream, melted butter, and vanilla until just combined.
    Portion batter (1/3 cup each) into muffin cups of paper lined cupcake pan. Spoon rounded tbsp of cream cheese mixture into center of each cupcake. Bake 18-22 min (tops just beginning to crack) (cont...)

  • cont... Let cool 10 min in pan, then transfer to wire rack to cool completely. Frosting: 1/4 cup shortening, 1 egg white, 1/2 tsp salt, 1/4 cup canned condensed sweetened milk, 2 1/4 cup powdered sugar. With electric mixer, mix shortening, egg white, salt, milk until smooth. Mix in powdered sugar 1/4 cup at a time combining well. Mix until smooth and spreadable. Spread on cupcakes! These cupcakes need to be refrigerated but should be served at room temp! They are delicious!

  • Does it have to be a scratch recipe? My kids love this: I get a chocolate cake mix (usually devil's food), use a cup of sour cream in place of one cup of water, and add an extra egg. When they're baked & cooled, I use my electric mixer to beat together 16 oz of heavy whipping cream and a small box of white chocolate pudding mix, then I fill the cupcakes with that, and either pipe more of the filling on top or pipe on homemade buttercream. I've done it with devil's food pudding too instead of white chocolate. Works with any and all flavors and combos. Really yummy!
