Banana bread?

My husband was going to make banana bread but he forgot yesterday and I thought I would do it for him. But I don't have a recipe. I also only have 3 over ripe bananas (plus a bunch of fresh ones). So does anyone have a good recipe that is quick and easy? Or at least easy!

  • I've made this recipe and I add 1/2 cup of pecan.  Comes out very good.

  • Best Banana Bread Ever
    1 cup whole-wheat pastry flour
    3/4 cup light brown sugar or raw sugar or succanat
    1 tsp. baking powder
    1/2 tsp. baking soda
    1/4 tsp. salt
    2 medium bananas, mashed
    1/3 cup unsweetened crunchy peanut butter
    1/4 cup plain fat-free yogurt (Greek-style is best)
    1 large egg
    2 Tbs. canola oil
    3/4 cup semisweet chocolate chips
    Preheat oven to 350F. Coat standard loaf pan with cooking spray. Combine flour, sugar, baking powder, baking soda and salt in large bowl.
    Whisk together mashed bananas, peanut butter, yogurt, egg and oil. Stir banana mixture into flour mixture until combined. Fold in chocolate chips. Scrape batter into prepared loaf pan.
    Bake 40 to 50 minutes, or until toothpick inserted in center comes out with a few moist crumbs clinging to it. Cool on rack 15 minutes before unmolding. Cool completely, then slice and serve.

  • I don't have a recipie for you on hand, but my grandmother used to make a spread to go on sweet breads such as banana bread and pumpkin bread!

    mix cream cheese and chopped marichino cherries together with like a tsp of the cherry juice....MMMM!!!

  • Banana Bread Recipe
    * 3 or 4 ripe bananas, mash with fork
    * 1/3 cup melted butter
    * 1 cup sugar
    * 1 egg, beaten
    * 1 teaspoon vanilla
    * 1 teaspoon baking soda
    * Pinch of salt
    * 1 1/2 cups of all-purpose flour

    Preheat oven to 350°F. Stir butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a sprayed 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack.

  • What I usually do is to use a banana bread mix and mix in a couple mashed bananas then follow package directions.
